Ah…the fall is finally here.
This is my favorite time of year and always has been. It is the season I married my beautiful wife in, the changing of the leaves can be as radiant as any summer sunset and it marks a change in our ingredients and cooking techniques.
This time of year we slow things down a little and cook ingredients that take longer to cook. You will start seeing a shift to deeper richer flavor combinations, as apposed to the spring and summer where we light to keep things as bright and crisp as we can. We start to cook with red wines, instead of white to add that warmth and complexity to dishes that makes you want to hunker down with a loved one and enjoy the place where you are at that moment.
These changes are not just happening in the kitchen; we are also being inspired by the Fall in our bar as well. Our infused liquor program is using Apples, Pears, Pumpkins, Vanilla & Cinnamon to create cocktails that, like the food, warm you to the soul.
Here are the ingredients that we are excited for and that you will be seeing for the next couple months:
Butternut Squash, Brussel Sprouts, Pears, Collard Greens, Lamb, Short Ribs, Beef Shank, Apples, Potatoes, Onion, Ginger, Cauliflower & Broccoli.
Our menu will be tweaked everyday to reflect the Fall bounty and the beauty that Mother Nature provides.
